Coconut Date Ball Protein Bites
Yield: 15 servings
Prep Time: 5 minutes
- ½ cup pitted and chopped dried dates
- ⅔ cup cashews
- 1 scoop Vega One French Vanilla
- ½ cup shredded, unsweetened coconut
Add dates, cashews and Vega One French Vanilla to the base of a food processor fitted with a chopping blade. Pulse until dates and nuts have formed a sticky crumb. Add coconut and pulse to combine. Depending on the consistency, you may need to add up to ½ cup water to make ingredients stick together.
Remove mixture from food processor and combine into a large ball. Cover and place in the fridge to harden, about 2 hours. Pinch off 2 tablespoons worth of dough and roll into balls. Protein bites will keep in the fridge for 10-14 days.
