Quadruple the cheese with this delicious artichoke dip, perfect for dipping pretzels, veggies or anything that needs a kick of blue cheese.

Ingredients

  • ½ cup mascarpone
  • ½ cup cream cheese
  • ½ cup grated parmesan
  • ½ cup blue cheese
  • ½ cup artichoke hearts
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon finely chopped parsley, for garnish

Preparation

Place all the ingredients except parsley in a blender and puree until smooth. Press through a fine mesh sieve to remove any fibrous parts of the artichoke hearts.

Transfer to a serving dish and garnish with parsley.
