With its nutty, creamy flavor, tahini (a.k.a. toasted sesame paste) is the star of these tantalizing cookies.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¾ cup (1½ sticks) unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 3 tablespoons honey
  • ¾ cup tahini, room temperature
  • ¼ cup toasted sesame seeds

Preparation

Heat oven to 350°F.

Whisk together the flour, baking powder and salt in a medium bowl.

In a stand mixer or hand mixer with a large bowl, mix the butter, sugar and honey on medium until light and fluffy, about 3 minutes. Beat in the tahini. Add half of the flour mixture and beat until incorporated. Repeat with the remaining half.

Place the toasted sesame seeds in a small bowl. Scoop 1 heaping tablespoon of cookie dough and roll into a ball. Dip into the sesame seeds, then place sesame-side up on large, rimmed baking sheet, leaving about 2 inches between each cookie. Repeat with the remaining dough.

Bake the cookies until golden brown, 13-15 minutes, rotating the baking sheet halfway. Allow cookies to cool on the baking sheet.
