Veggie Burger Patties

Homemade veggie patties are easier (and tastier) than you think. For a lighter take on the classic burger, simply follow this recipe, then add a bun and all your favorite burger toppings!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 shallot, minced
  • 2 portobello mushrooms, small diced
  • 1 tablespoon cumin
  • 1 cup cooked black beans, rinsed and dried
  • ⅔ cup cooked quinoa
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • 1 egg
  • 1 tablespoon black pepper

Preparation

Preheat oven to 250°F. Heat oil in a pan over medium heat. Sauté shallot and mushrooms with cumin for 5-7 minutes, then remove from heat. Crush black beans with the back of a spoon. Combine sautéed vegetables with crushed black beans and remaining ingredients. Form into burger patties and place on lined baking sheets. Bake for 40 minutes, then use cooked patties to build your burgers as desired.
