Chimichurri Drumsticks

Enjoy a taste of Argentina right at home by marinating and serving chicken drumsticks with homemade chimichurri.


  • 3 cloves garlic
  • 1 bunch cilantro
  • 1 bunch oregano, picked
  • 1 bunch parsley
  • 1 shallot, peeled and sliced
  • ½ jalapeño
  • 3 tablespoons sherry vinaigrette
  • 1 tablespoon salt
  • ¾ cup olive oil
  • 8 chicken drumsticks
  • 2 tablespoons vegetable oil


To create the chimichurri, place all ingredients except the oils and drumsticks into a blender. Puree on medium speed for 20 seconds. Pour in the olive oil to emulsify and set aside. 

With kitchen shears or a heavy knife, remove the top ½ inch of each chicken bone just below the joint. Marinate the drumsticks in half of the chimichurri for 2 hours.

Heat oven to 400°F.

Brush excess marinade from drumsticks and discard. Heat an oven-safe sauté pan on medium-high heat. Add the vegetable oil and sear the drumsticks on one side. Turn drumsticks over and place entire pan in the oven. Cook for 30-35 minutes, rolling the drumsticks in the pan every 5 minutes, until evenly browned with an internal temperature of 165°F.

Serve drumsticks with remaining chimichurri for dipping.
