Balsamic Pot Roast with Pearl Onions

Let the crockpot do the work with this delicious balsamic vinegar and pearl onion pot roast. 

Ingredients

  • 1 beef chuck roast, 4-5 pounds
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • ½ cup balsamic vinegar
  • 1 cup pearl onions, peeled
  • 4 cloves garlic, peeled
  • 4 red potatoes, halved
  • 1 sprig thyme

Preparation

Season chuck roast with salt and pepper.

Heat a large sauté pan, add oil and brown roast on both sides.

Place roast and remaining ingredients into the crockpot. Set to low and cook for 6-8 hours.

Remove roast and serve with crockpot contents.
