Beef Chili

This classic and hearty comfort food is perfect for game day or a cozy night in.

Ingredients

  • 1 pound beef chuck, 1-inch dice
  • ¼ teaspoon cumin
  • ½ teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ⅛ teaspoon cayenne
  • ¼ teaspoon chipotle powder
  • 3 tablespoons olive oil
  • 1 yellow onion
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup beef stock
  • 1 can (28 ounces) fire roasted tomatoes

Preparation

Combine beef with all of the dry spices. Heat 2 tablespoons of olive oil to just smoking in a large sauté pan. Sear the beef in batches, transferring to a 4-quart sauce pot when browned on all sides. Add remaining olive oil to sauté pan, add onion and garlic. Sauté until the onions begin to caramelize. Add the tomato paste, continue to cook for 30 seconds.

Deglaze with the beef stock and transfer to the pot with the seared beef. Add the canned tomatoes and bring to a simmer. Cook on low heat, partially covered, for approximately 4 hours stirring occasionally. Adjust seasoning with salt and black pepper.

Serve with shredded cheese and sour cream.
