From the makers of Cashel Blue comes this new sheep’s milk blue from Kerrygold.
Handmade and uniquely matured on the Grubb family farm, overlooked by the Rock of Cashel, they set about establishing a flock of milking sheep, somewhat of a rarity in Ireland. As a result, in 1993, Crozier Blue was developed and to this day it’s the only blue cheese made from sheep’s milk in Ireland. With a full, sweet, rich and cream-like mouthfeel, Crozier has notes of salt and toasted nuts along with gentle blue veining and a natural rind. Try it crumbled over salad or serve it with walnuts and drizzled with honey. A nice scotch ale completes your Crozier experience! Available starting March 1, 2015, while supplies last.
Fun fact: “Crozier” (or crook) refers to the hooked staff carried by a bishop or shepherd. The name Crozier Blue is a play on the fact that Crozier Blue is a sheep’s milk cheese and that it is in Cashel that St. Patrick converted the Irish. In fact, St. Patrick’s “crozier” can be seen today in the Rock of Cashel.
