With only 5 calories per cup, arugula comes loaded with an array of phytonutrients called indoles that help lower risk for both stomach and colon cancers. In fact, studies show that indoles may lessen the development of polyps, a precursor to colon cancer. Arugula also supplies health boosting carotenes and vitamin K which are important for bone health. With its peppery taste, arugula makes a great addition to salads and sandwiches or as a pizza topping. Wilt arugula briefly in a hot skillet and then top with lean protein such as grilled fish or chicken for a nutrient packed springtime meal. - Dr. Liz Applegate
