We might be well into late summer, but the bounty of the season just keeps on coming in Northern California. Now is the perfect time to check out the local summer squash available in our produce department: we have yellow crookneck, zucchini and eightball varieties on hand that are super-delicious this time of year.

Now is the perfect time to check out the local summer squash available in our produce department: we have yellow crookneck, zucchini and eightball varieties on hand that are super-delicious this time of year. Squash cooks well on the grill or in a stir-fry, as well as being rich in both potassium and vitamin C (great for heart health), and they contain just 36 calories per cup. Look for squash with unblemished and tender skin (the skin is a good source of those vitamins mentioned above, so you’ll want to eat it, too), and don’t forget that for squash-averse family members, you can sneak a serving into their diets by grating it and using in muffin or quick-bread recipes.
