The Thanksgiving feast is just around the corner, and you know what that means—leftovers! No matter how many unexpected guests come to the table and how many times we go back for seconds (or thirds or fourths…), once it’s all over, there always seems to be lots and lots of leftovers.

But, that doesn’t have to be a bad thing! Instead of rehashing the same meal several days in a row, it’s fun and easy to get a little creative and see leftovers in a whole new light.
For instance, try substituting turkey for chicken in your favorite broth and make a turkey noodle or tortilla soup. Add some white or dark meat to a fresh arugula salad with cranberry sauce and root vegetables for a cornucopia of harvest flavors.
