Double and triple crème bries are deliciously thick and creamy cheeses, but where do they get that ooey, gooey goodness? The answer is in the crème! Both double and triple crèmes have extra cream added before the curd is formed. A double crème has 60-75% butterfat while a triple crème has at least 75% butterfat. Both cheeses also have a high moisture content seen in their thick, creamy textures.
Due to their ultra creaminess, double and triple crème bries are classically paired with sparkling wine. The thick, buttery cheese coats your mouth while the effervescent bubbles and acidity of the wine cut through the fat and lighten the pairing. Double crèmes go well with more new world, fruity sparkling wines, while triple crèmes tend to pair better with old world, toasty and minerally sparkling wines.
