Feeling cheesy? The latest and arguably greatest new thing in the wonderful world of comfort food is the ooey, gooey goodness known simply as raclette.
Raclette (from the French word racler, meaning “to scrape”) is an uncooked, washed rind mountain cheese aged for up to one year. It has a silky, semi-firm texture and full, milky flavor that intensifies with sweet, tangy, assertive notes when heated.
Traditionally, the dish also known as raclette involves scraping molten raclette cheese straight from the wheel onto potatoes, bread or pickles. Nowadays, any number of tasty things can receive the cheesy treatment.
To create this mouthwatering comfort food at home, simply place a piece of Emmi Raclette under your broiler for a few minutes, then scrape off the melty goodness onto your chosen food (or melt directly on the food under the broiler) and revel in delicious, cheesy bliss.
