What’s the benefit of air-chilled chicken? Here’s what sports nutritionist Dr. Liz Applegate, PhD has to say on the matter:
The Air-Chilled Advantage: When manufacturers process raw chicken, they typically soak the whole chicken (less the feathers) in a water bath to chill the meat before it’s put into individual packages. This introduces water that doesn’t belong into the meat and also negatively impacts texture and flavor. The process of air-chilling involves cooling the whole chicken in cold air without soaking it in water. By air-chilling the chicken before packaging, the meat stays fresh and tender, and you’re also not paying for added water weight. Air-chilled chicken is more flavorful to boot!
