Combo 1: White bean puree + coppa + chili + garlic oil
White Bean Puree: In a food processor, puree white beans. Emulsify in the olive oil. Season with salt and lemon zest. Pass through a fine mesh strainer.
- 1 can (14 ounces) white beans, drained
- ¼ cup olive oil
- ½ lemon, zested
- Salt, to taste
Combo 2: Blue cheese mousse + cherry tomatoes + basil + olive oil + balsamic glaze
Blue Cheese Mousse: Mix the blue cheese and cream together until evenly incorporated.
- ½ cup Point Reyes Blue Cheese
- ¼ heavy cream

Combo 1: Crumbled Point Reyes Blue Cheese + dried figs in port reduction
Fig and port reduction: Combine all ingredients in a small sauce pot. Reduce over medium heat until liquid is a light syrup. Remove bay leaf and cool to room temperature.
- ½ cup dried figs, small dice
- ½ cup red port
- ¼ cup balsamic vinegar
- ½ bay leaf

Combo 1: Lightly sweetened whipped cream + fresh blueberries + wildflower honey
Whipped Cream: Combine all ingredients in a work bowl. Whip to stiff peaks. Adjust sweetness to taste with more or less sugar.
- ½ cup heavy cream
- 2 tablespoons sugar
- ½ teaspoon vanilla extract
