Our Wagyu beef comes fresh to us from First Light, a cooperative of farmers in New Zealand dedicated to producing premium grass-fed beef that’s beautifully marbled, tender, juicy and delicious. While highly-marbled grass-fed beef may seem like an oxymoron, First Light found a way by raising the Japanese breed of cattle known for “Kobe beef” on the lush, nutrient-dense grasses of New Zealand’s sprawling pastures.
Why Wagyu? First Light’s cattle produce some of the most marbled grass-fed meat in the world, and their award-winning steaks have won multiple golds in the World Steak Challenge. Not only that, Forbes called First Light Wagyu the best beef in the world in 2019. If the epic taste weren’t enough, their amazing Wagyu beef is also certified humane, non-GMO and free of antibiotics and hormones. Best of all, you can now find it at your local Nugget Markets.
Make the most of this superlative meat with these handy cooking tips:
- Allow meat to come to room temperature before cooking.
- Just before cooking, season with salt and pepper.
- Cook to medium rare or medium to melt the fat throughout the meat. (The marbling makes it very forgiving.)
- Sear roasts and thicker steaks first to help lock in the moisture while cooking.
- Roast at 250°F until meat has reached desired internal temperature; we recommend 110°F for medium rare.
- Remove from heat when meat is 5°F below desired cooking temperature to account for residual cooking. Wrap in foil and let rest before serving (5 minutes for steaks, 15–20 for roasts).
