Banana Bread Mug Cake with Vital Proteins

Prep Time: 5 minutes
Cook Time: 2 minutes
Ingredients:
- 1 ripe banana
- 1 egg
- ½ teaspoon vanilla extract
- 3 tablespoons oat flour
- ¼ teaspoon baking powder
- 2 scoops Vital Proteins Collagen Peptides
- 1 tablespoon chocolate chips (optional)
Preparation:
- Grease the inside of a large, microwave-safe mug.
- Add the banana to a work bowl and mash with a fork. Add the egg, vanilla extract, oat flour, baking powder and Vital Proteins Collagen Peptides, then mix until well combined.
- Fold the chocolate chips into the batter (optional).
- Pour batter into the mug and microwave for 2 minutes. Pause the microwave as the batter reaches the top of the mug, then resume once the batter lowers.
- Once cooked, top with extra chocolate chips, banana slices or your favorite toppings.
