Over 300 small–scale farmers in the Snake River Canyon region of Idaho grow beans for Jim Soran, a second–generation “bean guy” who has been growing authentic heirloom beans since 1985. Growing beans from pure strains that are fresh from the field, they offer traditional varietals including cannellini, fava, flageolet and French navy. Here’s a rundown of some of our favorite varieties:
Black Turtle
Mild, sweet, earthy flavor. Combines well with seasonings—use in spicy soups, stews and casseroles.
Cannellini
Also known as “white kidney beans.” Mild, nutty flavor and creamy texture. Use in soups, salads and pasta dishes.
Chana Dal
A small pea, peeled and cut in half. Mild and meaty, thickens when cooked, combines well with pungent spices. Use in soups and stews.
Christmas Lima
Chestnut flavored. Embellish by adding butter, garlic and fresh parsley; serve as an appetizer, side dish or main course.
Cranberry
Appealing, sweet milk flavor. Hearty—use in soup, salads, pasta dishes and casseroles.
Fava
Earthy, chestnut–like flavor, dense and floury texture. Combines well with pungent spices and aromatic herbs. Can be pureed and used as a dip.
Flageolet
Delicate flavor. Versatile addition to soups, salads and vegetarian dishes.
French Navy
Mild flavor and creamy, smooth texture. Use in soups.
White Emergo
Also known as “sweet white runner beans.” Plump, creamy texture—use with savory herbs, fruity olive oil, sea salt and lemon.
Paris Bistro Mix
