When we prepare these coffees in our coffee bars, we use a Clever Coffee Dripper—a full–immersion coffeemaker that is a cross between a French press and a Hario V60 (a manual, pour–over style coffeemaker). This sort of manual coffee brewing is becoming increasingly popular because it produces a clean, smooth cup of coffee that highlights different flavor notes than traditional brewed coffee.
