Classic cucumber sandwiches get a tasty makeover with the addition of shrimp, radishes and Tajín!
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tablespoons Tajín
- ½ English cucumber
- 4 slices sourdough bread
- 3 large red radishes, shaved thin
- 12 cooked shrimp (31-40 count), split lengthwise
Mix together sour cream, mayonnaise and Tajín.
Cut cucumber into 3-inch lengths and slice ⅛-inch thick on a mandolin or with a knife.
Lay bread slices out on a work surface and spread each with an even layer of the Tajín mixture. Layer shrimp, cucumber and radish on every other slice of bread and top with the remaining slices. Cut off the crust and slice into 4 equal portions.
