Grilled Salmon with Spiced Peaches

Ingredients
- 2 each 6 ounce salmon filet
- TT Salt
- TT Pepper
- 1 each peach
- 1 tablespoon chili Powder
- 3 tablespoons olive oil
- 2 each shallots, cut thin rings
- 1 each lime, juiced
- 1 each orange, juiced
- 2 tablespoons chopped chives
- 1 each avocado, sliced
Preparation
Heat grill to medium high heat. Season salmon with salt and pepper and grill to your liking. Heat a sauté pan to medium high heat. Cut the peach into 8 wedges and dust each wedge with chili powder. Add the olive oil to the pan and caramelize the peach wedges on each side. Remove peaches from pan, reduce heat to medium and add the shallots. Cook shallots until caramelized. Deglaze with the juices and bring to a boil. Season with salt and pepper and add chives. Arrange ½ avocado on a serving plate, top with salmon. Arrange peaches on top of salmon and pour shallot sauce over the top.
