White Cheddar Cornbread

Cornbread baked with sharp white cheddar, and corn kernels right off the cob.
Ingredients
- 1 ½ cup whole milk
- ½ cup, canola oil
- 2 large eggs
- ¾ cup sugar
- 1 cup cornmeal
- 1 ½ cups all-purpose flour
- 1 teaspoon, baking powder
- 1 teaspoon, salt
- 1 cup canned or fresh corn,
- 2 cups sharp white cheddar
Preparation
Preheat oven to 325º. Grease a 8x8, 2" deep pyrex pan, set aside.
In a medium work bowl combine milk, canola oil, and egg. In a separate bowl combine sugar, cornmeal, flour, baking powder, and salt.
Add dry ingredients slowly to the wet ingredients a cup at a time, mix till smooth and incorporated. Next add cheddar cheese, and the corn. Mix just to combine and pour batter into prepared baking dish. Bake at 325F for approximately 45 minutes or when tooth pick inserted into center of cornbread comes out clean.
