Shishito Peppers with Garlic & Cumin

These delicious roasted peppers make a great snack on their own or a tasty side for any dish.
Ingredients
- 1 teaspoon olive oil
- 1 pint shishito peppers
- 2 cloves garlic, shaved thin
- 1 teaspoon ground cumin
- Kosher salt, to taste
- 2 lemon wedges, for serving
Preparation
Heat a cast iron skillet until smoking. Toss peppers with oil in a work bowl, then place peppers in a single layer in the hot skillet. Char and toss until peppers are evenly charred.
Remove peppers from the pan, turn off the heat and tilt the pan back to allow the oil to collect in the back of the pan. Add the garlic to the pan and cook until it just begins to brown. Remove the garlic from the pan and toss with the peppers. Season with salt and cumin, then serve with lemon wedges.
