Rotisserie Chicken Soup

Starting with rotisserie chicken makes chicken soup a quick and easy meal, but if you want to go the extra mile, you can use the bones to make your own stock!
Ingredients

Preparation
Heat olive oil in a medium sauce pot over medium heat. Add the carrot, celery, and grilled onion and sauté until the carrot and celery are tender. Add the eggplant, squash, and chicken stock and bring to a simmer. Add the picked chicken and parsley and return to a simmer. Season to taste with salt and pepper.
