Rosemary-Garlic Marinated Olives

Ingredients
- ½ c. Olive Oil
- 1 Orange
- 1 Lemon
- 1 sprig of Rosemary
- Crushed Red Pepper Flakes, to taste (½ – 1 tsp.)
- ¼ tsp. whole Black Peppercorns
- Garlic Slices
- ¼ pound Kalmata Olives with pits or assorted Brined Olives
Preparation
Place olive oil in a heavy saucepan.Using a vegetable peeler, remove the peel from the orange and lemon in strips.
Add half of the orange and lemon peel to saucepan with olive oil.
Add rosemary, chili flakes, garlic slices, and whole peppercorns.
Heat olive oil mixture over medium heat just until warm, about 3 min.(do not boil).
Place olives in bowl and pour oil mixture over top.
Add the remaining orange and lemon peel.
Refrigerate at least 4 hours, more flavor will occur with more time.
Bring to room temperature, before serving.
