Whole Roasted Chicken

Simple ingredients and proper technique are the secrets to a perfectly roasted chicken.
Ingredients
- 1 whole chicken (4–6 pounds)
- 1 tablespoon fennel seeds, toasted and ground
- 1 tablespoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon kosher salt
- 1 teaspoon cracked black pepper
- 2 tablespoons unsalted butter, melted
Preparation
Preheat oven to 400°F.
Trim away any excess fat from the cavity of the chicken. Combine the remaining ingredients in a small bowl. Rub 1 tablespoon of the spice mixture inside the cavity of the chicken. Spread the remaining mixture evenly over the exterior.
Truss the chicken with twine, if desired, to help it maintain its shape. Place on a roasting rack and cook for 55–65 minutes, or until the internal temperature of the thickest part of the breast reaches 165°F.
Remove chicken from the oven and let rest 15 minutes before carving.
