Classic Oysters Rockefeller with Garlic Mashed Potatoes

Ingredients
- 2 tbl. Chopped small dice green onions
- 2 tbl. Chopped small dice celery
- 3 tbl. Chopped small dice fennel
- 3 tbl. Chopped parsley
- 4 tbl. Butter
- 1 cup chopped spinach
- 6 tbl. Seasoned bread crumbs
- 3 tbl. Pernod
- salt & pepper to taste
- Dash of cayenne
- 2 Dozen Oysters (your choice of what kind)
- Garlic Mashed Potatoes:
- 3 Large Russet Potatoes (peeled and steamed or boiled till soft)
- 3 tablespoons Butter
- 3 cloves garlic diced fine and sauted in butter
- 1 cup milk
- salt & pepper to taste
Preparation
Saute onions, celery, cayenne and herbs in the butter for 3 minutes. Add the chopped spinach and let wilt. Add the bread crumbs. Deglaze the pan with pernod and burn off the alcohol. Top the oysters with the Rockefeller mixture and pipe some garlic mashed potatoes around the rim of the oyster shell. Place on the grill for about 10 minutes.
Boil or steam the potatoes till done. In a bowl mash the potatoes with salt & pepper. Add the butter, garlic then add the milk till the desired right consistency is reached.
Arrange all on a plate.
