Crab Soufflé Appetizer

Ingredients
- 6 oz. crab meat (fresh preferred or use a good canned crab), drain well
- ½ cup sour cream
- ½ cup mayonnaise
- A dash of Tabasco
- 1 tsp. Dijon
- ¼ cup finely minced shallots
- ¼ cup Parmesan cheese
- ½ tsp. sea salt
- ¼ tsp. freshly ground black pepper
- 2 egg white beaten to stiff peaks or 1 egg whisked to a frothy state.
Preparation
Set oven to 350oF. Lightly grease a 1 qt. baking dish or use 4 individual ramekins.
In a mixing bowl, combine the crab meat, sour cream, mayonnaise, Tabasco, Dijon, shallots and Parmesan. Add in salt and pepper and adjust seasoning if needed. Fold in egg whites and pour into prepared baking dish.
Bake for 20-25 minutes until soufflé is puffy. Serve warm with crostini, crackers or slices of French bread.
