Curried Shrimp & Baby Artichoke Kabobs

Ingredients
- 24, 16 - 20 shrimp
- 6 baby artichokes (Steamed whole for 20 minutes)
- 6 cherry tomatoes
- 2 tablespoons fresh Thyme
- 2 whole shallots minced
- 1-tablespoon yellow Thai curry
- ¼ cup olive oil
- salt & pepper to taste
- ½ lemon (use while grilling)
- 6 skewers
Preparation
In a bowl, marinate the cleaned and deveined shrimp, quartered, steamed and chilled artichokes, fresh thyme, minced shallots, curry and olive oil. Let marinate for 2 hours. Skewer alternating shrimp, artichoke and cherry tomato. Season with salt & pepper and grill for 3 to 5 minutes per side or until the shrimp turn opaque. Add lemon halfway through cooking process on the shrimp skewers over the grill.
