Avocado ice cream tastes like a cold, sweet, creamy version of avocado—perfect for avo-devotees who want to branch out from their traditional, savory applications.
Ingredients
- 2 large avocados2 large avocados 2 large avocados
- 2 tablespoons lemon juice2 tablespoons lemon juice 2 tablespoons lemon juice
- ½ cup granulated sugar½ cup granulated sugar ½ cup granulated sugar
- ½ teaspoon kosher salt½ teaspoon kosher salt ½ teaspoon kosher salt
- ½ cup milk½ cup milk ½ cup milk
- 1 cup heavy cream1 cup heavy cream 1 cup heavy cream
Preparation
Peel the avocados and remove the pits. Cut into large chunks and place in a food processor. Add the lemon juice, sugar, and salt and puree until smooth, scraping down the sides as needed. Add the milk and puree until incorporated, followed by the cream. Do not overmix once the cream is added.
Pass mixture through a fine mesh strainer, then place in an ice cream machine and churn according to the manufacturer’s instructions. Note: Avocado ice cream will set in about half the time of traditional ice creams.
Once churned, allow ice cream to set in freezer for 2 hours before serving.
