Marinated Cucumbers with Shrimp & Ginger Sesame Dressing

Ingredients
Marinated Cucumbers:
- 2 large cucumbers, peeled and sliced
- 2 teaspoons salt
- 4 tablespoons rice wine vinegar
- 2 tablespoon sugar
- 1 teaspoon soy sauce
Ginger Sesame Dressing:
- ½ cup minced onion
- ½ cup peanut oil
- ⅓ cup rice wine vinegar
- 2 tablespoons water
- 3 tablespoon fresh ginger, grated
- 2 tablespoons minced celery
- 2 tablespoons ketchup
- 4 teaspoons soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons sugar
- 2 teaspoons lemon juice
- 1 teaspoon garlic, chopped
- ½ teaspoon salt
- Black pepper to taste
Salad:
- Iceberg lettuce, shredded
- 1 bag coleslaw mix
- ¼ cup cilantro, chopped
- 6-8 marinated cucumbers
- ½ pound 16-20 count shrimp
- 1 bag crispy chow mein noodles
Preparation
Marinated Cucumbers:
Sprinkle cucumber slices with salt and let stand for 30 minutes. Squeeze out excess moisture.
Combine vinegar, sugar and soy sauce in a bowl and mix well. Pour the vinegar mixture over the cucumber slices and mix well. Let stand for at least 30 minutes.
Ginger Sesame Dressing:
Combine all ingredients in a blender and blend on high speed for approximately 30 seconds, or until well incorporated.
Salad:
Place iceberg lettuce, finely shredded cabbage (coleslaw mix) and chopped cilantro in individual salad bowls. Add cucumbers and top with cooked shrimp. Drizzle with Ginger Sesame dressing and garnish with crispy chow mein noodles.
