Kumamoto Oysters with Horseradish Mignonette

Mignonette is a classic accompaniment to oysters—the acid in the vinegar creates a lovely contrast with the briny creaminess of the shellfish. Don't overdo it when you're dolloping on the sauce; a little will go a long way.
Ingredients
- 2 tablespoons minced shallots
- 2 tablespoons grated horseradish
- 4 tablespoons red wine vinegar
- 4 tablespoons Champagne vinegar
- 1 tablespoon chopped chives
- ½ teaspoon salt
- 12 Kumamoto oysters
- 1 red radish, julienned, for garnish
- 2 chives, cut into sticks, for garnish
Preparation
Combine the shallots, horseradish, vinegars, chopped chives and salt in a small bowl and mix well to create the mignonette.
Shuck oysters and arrange on a serving platter. Add mignonette to the shells and garnish with radish and chive sticks.
