Grilled Cumin Curry Halibut with Cranberries

Ingredients
- 6, 4 oz. pieces Halibut fillet
- 3 tablespoons curry
- 3 tablespoons cumin
- ¼ cup dried cranberries, chopped
- ⅔ cup caramelized pecans, chopped
- Kosher or sea salt and cracked black pepper to taste
- 2 tablespoons thyme, chopped
- 2 oz. olive oil
- Caramelized Pecans:
- 1 cup pecans
- 2 tablespoons lemon juice
- ¼ cup sugar
Preparation
Marinate the halibut in all the ingredients (except the cranberries, salt and caramelized pecans) for at least 1 hour.
Preheat grill to medium-high heat. Season the fish with the salt just before grilling. Grill halibut for 4-6 minutes on each side. When the fish is done, remove from heat and garnish with cranberries and caramelized pecans.
Prepare caramelized pecans earlier in the day.
Lightly moisten the pecans with the lemon juice. Toss in sugar, then bake at 300°F until sugar melts onto the pecans, about 10 minutes. Let cool and then chop for a garnish. Save extra pecans in a sealed container; they make great additions to hot breakfast cereals and salads.
