Jack Daniel's BBQ Sauce

Ingredients

  • 1 can chipotle (use 1 chipotle seeded and 1 tsp. Liquid)
  • 3 medium onions chopped
  • 2 medium carrots
  • 4 cloves garlic chopped
  • 2 tablespoons salad oil
  • 1 ½ cups Jack Daniels
  • 1 cup white vinegar
  • 1 cup packed brown sugar
  • ½ cup sugar
  • ¼ cup honey
  • 1 quart diced tomatoes
  • 1 small can tomato paste
  • 2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 tablespoon pickling spice
  • 1 tablespoon of liquid Smoke

Preparation

In a 2 quart pot saute the onions, carrots and garlic in the salad oil. Cook over medium until soft and lightly brown in color. Deglaze the pot with the Jack Daniels be careful as it could flame up.  If you need to cover with a lid to put out the flames.  Simmer for 10 minutes to burn off the alcohol but leave the flavor.  Then add the rest of the ingredients and cook until thick (about one hour). Blend and cool.
