Force of Nature Ground Beef Meatballs

Simmer these rich and hearty meatballs in a finishing sauce made with habanero marionberry preserves—or substitute your own favorite spicy fruit preserve to create the ideal blend of salty, sweet and spicy. Perfection!
Ingredients
- 1 pound Force of Nature ground beef
- 1 tablespoon sage, chopped
- ¼ cup dried cranberry, chopped
- 2 tablespoons parsley, chopped
- ½ cup yellow onion, fine diced
- ½ cup bread crumbs
- 2 tablespoons Parmesan cheese, grated
- ¼ teaspoon thyme
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 large egg
- 1 cup heavy cream, divided
- 2 cups beef stock
- ¼ cup habanero marionberry preserves (or any other spicy fruit preserve)
Preparation
Preheat oven to 400°F.
Mix together the ground beef, sage, cranberry, parsley, onion, bread crumbs, Parmesan cheese, thyme, salt, pepper, egg and half the cream in a work bowl. Shape 1-ounce meatballs and place on a lined baking sheet. Bake in the oven to an internal temperature of 155°F.
While the meatballs are cooking, heat the beef stock in a wide sauce pot over a high flame. Reduce stock by half and then add in the preserves. Bring to a boil and then add the remaining ½ cup cream and reduce to a simmer.
When meatballs are cooked, add them to the sauce and simmer until sauce coats the meatballs. Serve immediately.
