We love the versatility of Bunches & Bunches Smoked Oaxacan Mole Sauce—it can be used as a braising or cooking sauce for proteins, or as a dip or condiment tableside. Here it lends its complex flavors to baked beans simmered with onions and bacon.
Ingredients
- 3 strips bacon, diced
- ½ yellow onion, small diced
- 8 ounces dried small red beans, sorted to remove any stones, rinsed
- 1 cup Bunches & Bunches Smoked Oaxacan Mole Sauce
- 3½ cups chicken stock or water
- ¼ cup cilantro, chopped
Preparation
Preheat oven to 300°F.
In a medium, oven-safe sauce pot with a lid, render the bacon over medium heat until just beginning to crisp. Add the onions and sauté until caramelized, about 5–7 minutes. Then add the beans, mole and chicken stock (or water).
Cover with lid and place in the oven. Bake for about 2½ hours or until beans are tender but still hold their shape. Remove pot from oven, fold in the chopped cilantro and serve.
