Scallion and Potato Tortilla

Ingredients
- 2 T. olive oil
- 1 large russet potato, peeled, diced and boiled
- 2 c. scallions, chopped
- 8 eggs, beaten with 4 T. water
- 1 c. Manchego cheese, shredded
- Kosher salt
- Freshly ground black pepper
Preparation
Heat oil in a sauté pan over medium heat.
Add potatoes, scallions, eggs, and cheese. Season with salt and pepper.
Lower heat and move mixture around with a wooden spoon so that it cooks evenly.
Once tortilla is set, slide it out onto a plate to turn it over. Cook on the other side until done.
Let cool to room temperature. Slice in wedges and serve.
