Frisee with Sherry Vinaigrette, Apple-wood Smoked Bacon, a Poached Egg & Chives

Ingredients
- 3 small heads frisee, cut & cleaned
- Kosher salt
- Freshly ground black pepper
- Sherry vinaigrette
- 6 strips apple-wood smoked bacon, diced and cooked
- 6 poached eggs
- 2 T. chives, chopped
- Vinaigrette:
- 2 oz. sherry vinegar
- 2 oz. olive oil
- 2 oz. Canola oil
- 2 oz. 100% olive oil oil
- 1 T. minced shallots
- Salt and pepper to taste.
Preparation
VinaigretteMix thoroughly 2 oz. sherry vinegar, 2 oz. olive oil, 2 oz. Canola oil, 2 oz. 100% olive oil oil, 1 T. minced shallots and salt and pepper to taste.
Salad
Toss frisee in a large mixing bowl with salt & pepper.
Mix in vinaigrette.
Arrange on plates
Top each salad with a poached egg, some cooked bacon and chives.
