Breakfast Calzones

				Spicy chorizo or spinach and ham—choose your favorite filling to make the morning extra memorable with homemade breakfast calzones!
Ingredients
Calzone Crust:
- 1 ball Fresh to Market Pizza Dough
 - Flour, for rolling
 - 1 egg, beaten
 
Chorizo Filling:
- 6 eggs, scrambled
 - 6 ounces chorizo, cooked
 - 1 red jalapeño, sliced into thin rings
 - 6–8 ounces shredded cheddar jack cheese
 - 4–6 ounces cooked, medium-diced potatoes
 - 2 tablespoons cilantro
 
Spinach Filling:
- 6 eggs, scrambled
 - 5 ounces spinach, wilted and drained
 - 6 ounces ham, sliced
 - 1 yellow onion, medium diced and caramelized
 - 6–8 ounces shredded Swiss cheese
 
Preparation
Place pizza dough on a floured work surface. Cut into 4 equal portions then roll each piece into a uniform ball. Cover with a towel and let rest at room temperature for 30 minutes.
On a floured surface, press each ball into a disk with your fingertips and then toss, roll or stretch into an 8-inch circle. If dough becomes difficult to stretch, allow dough to relax for 5 minutes before continuing.
Layer your chosen filling ingredients on half of each circle. Lightly coat the edges with egg wash, then carefully fold the dough over the top to create a half circle. Press the edges together to completely encase the filling, then crimp or fold the edges to create a tight seal.
Heat oven to 450°F.
Egg wash each calzone and place on a lined baking sheet. Bake for 8–12 minutes until well browned. Serve hot.
