Italian Sausage & White Bean Soup

This simple soup is sure to warm you up even on the coldest of days! For a vegetarian version, either leave out the sausage or replace with your favorite plant-based protein.
Ingredients

Preparation
Heat a 4-quart sauce pot on medium-high heat. Add sausage and cook until well browned. Remove sausage from pan, leaving any rendered fat.
Add chili flakes, carrots, celery, onion and garlic to the pan and sauté for 5–6 minutes, until beginning to brown. Deglaze with white wine then reduce by ¾.
Add the chicken broth and cannellini beans and bring to a boil. Add spinach and basil and stir until wilted. Season with salt and pepper.
