Ingredients
- 2 cups brown rice
- 1 tablespoon olive oil
- ½ teaspoons cumin
- ¼ teaspoon coriander
- ½ teaspoon garlic powder
- 1 teaspoon salt
- 4 strips lime peel
- 3½ cups water
Preparation
Heat a 4-quart sauce pot with lid on medium heat.
Add the olive oil and rice, then toast for 5 minutes, stirring constantly. Add the spices and toast 2 more minutes.
Add the lime peel and water and bring to a boil. Cover with a tight-fitting lid and cook on medium-low for 35–40 minutes, until rice is tender.
Remove rice from heat, fluff with fork and cover with lid for 10 minutes before serving or chilling.
