Fava Bean and Corn Salad

Ingredients
- 20 pods of Fava Bean
- 5 ears of Corn
- 1 Red bell pepper
- 1 bunch Tarragon
- 1 tablespoon Champagne Vinegar
- 1 tablespoon Dijon mustard
- 4 tablespoons Extra Virgin Olive Oil
- Salt and Pepper to taste
Preparation
Use as a side vegetable dish, a salad dish, or as a bed for white fish.Take Fava beans out of pods. Score the outer shell of Fava bean. Blanch beans to boiling water for 2-3 minutes. Drain water and put beans in ice bath to chill. Squeeze beans out of shell. Shuck corn. Put into boiling water for 4 minutes, chill in ice bath. Drain well. Cut corn off the ear. Take the pith off the bell pepper julienne pepper in long thin strips. Mix fava beans, corn and bell pepper.
In separate bowl make vinaigrette with Champagne vinegar, minced tarragon, Dijon mustard. Wish in olive oil slowly. Add to bean and corn mixture toss and add salt and pepper to taste.
