Sliced Apples with Chocolate Port Dipping Sauce

Ingredients
- 2 T. Butter
- ½ c. Semi-Sweet Chocolate Chips (Guittard is preferred)
- ¼ c. Dark Brown Sugar, firmly packed
- 2 T. light Corn Syrup
- ¼ c. Heavy Whipping Cream
- 3 T. Port Wine
- Dash of Instant Coffee (optional)
- ¼ tsp. Vanilla
Preparation
Melt the butter over low heat in a small saucepan, as sturdy as possible.Add the chocolate, stirring constantly over Low Heat until melted.
Remove from heat and stir in the brown sugar.
Return to heat and add the corn syrup, instant coffee powder, port and cream.
Simmer, over low heat, about 7 minutes, only stirring occasionally; be careful not to burn.
Add the vanilla.
It will thicken as it cools.
