Honey, Fig & Farmers Cheese Empanadas

For a delightful, little dessert that's as fun to make as it is to eat, try your hand at these tasty treats complete with a honey chocolate dipping sauce.
Ingredients
Dough:
- 2½ cups flour
- 2 tablespoons honey
- ½ teaspoon salt
- 8 ounces cold butter, chopped
- 8–10 tablespoons ice water
Filling:
- 6 ounces farmers cheese
- ½ cup dried figs, chopped fine
- ½ cup pecans, toasted and chopped
- ½ cup dates
- 2 tablespoons honey
- ½ teaspoon cinnamon
- ⅛ teaspoon salt
- 1 egg, whipped
Dipping Sauce:
- ½ cup honey
- ½ ounce chocolate
- Sea salt, for garnish
Preparation
To make the dough, place flour in a food processor then add honey, salt and butter. Process for 5–10 seconds until the butter is in pea-sized pieces. Add the ice water while pulsing until mixture is moistened but still crumbly. Turn dough onto a work surface and divide into 2 piles. Press each pile into a ball and wrap in plastic. Let rest refrigerated for 20–30 minutes.
Combine all the ingredients for the filling except the whipped egg in a work bowl and mix to combine.
Place rested dough on a floured work surface. Dust the top with flour and then press into a circle with a rolling pin. Roll dough out to a thickness of about ⅛ inch. Cut out circles about 3–4 inches in diameter. Place about 1 tablespoon of filling in the center of each circle. Brush egg wash around the top half of the circle. Fold dough circle in half over the filling and press the edges together. For a decorative edge, press fork around the sealed edge.
Lay empanadas on a baking sheet, brush with egg wash and bake for 15–18 minutes, rotating halfway, until golden brown.
For the dipping sauce, warm honey in microwave in 20 seconds increments, add chocolate and whisk in until melted. Serve empanadas with warm honey chocolate sauce.
