Shortbread Cookies

Ingredients
- ½ lb. (2 sticks) of Butter (room temperature)
- ½ c. Sugar
- 2 c. Flour
- 1 tsp. Vanilla
- 1 tsp. Almond Extract (optional)
- Powdered Sugar for coating (optional)
Preparation
Preheat oven to 350° (325° for convection oven)Cream butter and sugar.
Add all other ingredients
Refrigerate dough for 15 min.
Roll into 1 or 2 logs.
Refrigerate 15 minutes or can even be done overnight.
Slice ¼” slices
Bake on ungreased or parchment paper lined cookie sheet
Bake for about 20 minutes, tops will not be browned (12-28 min. for convection oven)
Cool on a rack
When fully cooled, sprinkle with powdered sugar
Variations
To the basic recipe, you may add ¼ c. of toasted nuts (walnuts, pecans, cashews)
To toast nuts, put chopped nuts in 350° oven for about 15 min. or until browned.
Can also add ½ - 1 c. Chocolate Chips or Butterscotch or Peanut Butter Chip
