Salsa Roja

Fresh, flavorful and fast, this simple salsa is sure to please!
Ingredients
- 4 Roma tomatoes
- 2 jalapeños
- 3 cloves garlic
- 1 yellow onion, rough chopped
- 1½ cups water
- 1 bunch cilantro
- Kosher salt, to taste
Preparation
Place tomatoes, jalapeños, garlic, onion and water in a sauce pot. Bring to a boil, then simmer for 15–20 minutes, until tomatoes and onions are completely soft.
Pour into a blender and puree with cilantro until smooth. Season with salt to taste and chill.
Salsa may be stored in refrigerator for up to 7 days.
