First seared on the stove then finished in the oven, this simple salmon preparation is the perfect balance of crisp and tender.
Ingredients
- 2 tablespoons olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 4 salmon fillets (6 ounces each), skin-on, scaled
Preparation
Preheat oven to 425°F.
Heat a large nonstick, oven-proof frying pan over high heat, then add olive oil and heat until just before smoking point. Season salmon with salt and pepper, then place into hot oil skin-side up, placing fish away from you to minimize chances of oil splatter. Sear until fillets start to brown, about 2–3 minutes.
Place pan in the oven and roast for 5 minutes, or to desired doneness. Remove pan from oven and remove salmon from frying pan, being careful to keep crusted presentation side intact. Serve skin-side down with your favorite starch and vegetables.
