Steel-Cut Oats with Balsamic Fig Reduction

				Hearty oats are a perfect start to the day. This recipe twists tradition with a sweet and tangy balsamic-honey reduction in lieu of the oft-favored brown sugar. If you find yourself with extra balsamic fig reduction, try drizzling it over grilled lamb chops or vanilla bean ice cream!
Ingredients
- 1 cup steel-cut oats
 - 4 cups water
 - ½ teaspoon kosher or sea salt
 - 3 cups balsamic vinegar
 - ¼ cup honey
 - ⅓ cup quartered dried figs
 
Preparation
Whisk oats into 4 cups of rapidly boiling water. Add salt and reduce heat to simmer. Cook 30 minutes, stirring occasionally.
Meanwhile, in a small pot over medium-low heat, combine balsamic vinegar, honey and figs. Reduce until liquid has reached about 1 cup (⅔ the original volume). Remove from heat and let cool.
Drizzle balsamic fig reduction over finished oatmeal and serve.
