For a truly decadent snack, indulge in this Canadian classic starring French fries topped with cheese curds and drenched in homemade gravy.

Preparation
In a large saucepan, melt the butter. Add the flour and cook, stirring regularly, for about 5 minutes, until the mixture turns golden brown.
Add the beef broth and bring to a boil, stirring with a whisk, until gravy is mooth and thickened. Season with pepper and salt to taste. If making ahead, re-warm or keep warm until fries are ready.
Cook French fries according to package directions until potatoes are golden brown.
In a large workbowl, season fries lightly with salt while still warm, add cheese curds and a ladle of hot poutine gravy, then use tongs to toss the fries in the gravy. Add more gravy, as needed, until fries are mostly coated.
Serve immediately with fresh ground pepper, if desired.
