Fried Green Tomatoes

This Southern-style recipe stars green tomatoes which keep their hearty crunch and tangy flavor even after cooking. Enjoy as an appetizer with remoulade or inside a BLT for a fantastic twist on a classic.
Ingredients
- 2 eggs, beaten
- 1 cup all-purpose flour
- 1 teaspoon fine sea salt
- 1 teaspoon cracked black pepper
- 1 teaspoon garlic powder
- 1 cup yellow cornmeal
- 1 cup ghee
- 3 green tomatoes, sliced crosswise to ½ inch
- 1 cup remoulade, for dipping
Preparation
Place the eggs in a shallow bowl for dredging. Combine the flour, salt, pepper and garlic powder in another shallow bowl, and place cornmeal in a third shallow bowl.
Heat ghee in a medium skillet over medium-high heat. Working in batches to avoid crowding the pan, dredge a tomato slice in seasoned flour, then eggs and finally the cornmeal before placing directly into the hot ghee. Fry tomatoes on each side for about 2 minutes, or until cornmeal is lightly browned and forms a crispy crust. Tomatoes should still be firm.
Remove fried tomato slices to a wire rack over a paper towel-lined baking sheet, and place in an oven set to low to stay warm.
Serve warm with remoulade for dipping.
